Abstract
The purpose of this research are to describes the quality and type of rice and type of rice substitutes which consumed by residents of Prabumulih City, analyze rice and rice substitute consumption in Prabumulih City. The result showed that the rice consumed by residents Prabumulih City is good quality rice, considered from the price more expensive than price of BULOG in rice. Type of dominant rice that consumed was IR 64. Type of dominant rice substitution was instant noodle. Rice consumption high income household isr is lower than medium and low income rate. For households with high income rate, average level of rice consumption amounted to 94,95 kg/ capita/ year, while rice consumption medium rate amounted to 98,64 kg/ capita/ year, and 99,70 kg/ capita/ year for low income rate. Substitute of rice consumption in high income household is higher than medium and low household. Factors that significantly affected consumption are : number of family member, household income, price of rice, kind of job, and age composition of family member. Factors that affected rice substitute consumption are : number of familiy member, household income, gender, and kind of job.
