Abstract
The objective of this research was to study effect of ressure, material thickness and temperature on the physicochemical of carrot. The research was conducted at the Department of Agriculture Technology, University of Sriwijaya from 2015 March till 2015 June. The research used randomized block design factorial with three factors of drying pressure in two level which were drying pressure -60cmHg and -70 cmHg, material thickness were 1 mm, 2 mm, and also drying temperature in two level were 45ºC and 55ºC The observed parameter include moisture content (%), drying rate (%/hour), total of carotene (ppm) and color with Lab method.The result showed that drying pressure, material thickness and temperature had significant effect on moisture content, drying rate, total of carotene and color. Whereas interaction pressure with material thickness had significant effect on moisture content of carrot chip, moisture content of carrot flour, total of carotene and lightness value. Treatment A2B2C1 (drying pressure -70 cmHg, material thickness 2 mm and temperature 45ºC) showed good characteristic of carrot flour with moisture content was 7.39%, drying rate was 83,19%/hour, total of carotene was 17.73 ppm and color (lightness was 63.50, redness was 32.90 dan yellowness was 27.47).
