Abstract

BAGUS SEPTIAN. The Effect of Rough Rice Moisture Content and Storage Humidity on The Physical Quality Changes of Milled Rice (Supervised by TAMRIN LATIEF and FILLI PRATAMA). The research objective was to determine the effect of rough rice moisture content and storage humidity on the physical quality changes of milled rice. The research was designed as a factorial completely randomized design with two factors, namely rough rice moisture content and storage humidity. The rough rice moisture content (MC) consisted of A1: harvested moisture content 24,89% (wb), A2: 22% (wb) and A3: 18% (wb), while the storage humidity consisted of B1: 75% and B2: 85%. The parameters were percentage of physical quality (whole, head, broken and minute rice) which were periodically measured during seven days of storage. The result showed that the rough rice moisture content and storage humidity had significant effect on physical quality of milled rice during seven days of storage. The highest percentage of whole rice was the treatment of A3B1 (18% MC and 75% storage humidity) on day 2, while the lowest percentage of whole rice was the treatment of A1B1 (rough rice MC on harvest and 75% storage humidity) on day 7 of storage period. The highest percentage of head rice was the treatment of A3B1 (18% MC and 75% storage humidity) on day 4, while the lowest percentage of head rice was the treatment of A1B2 (rough rice MC on harvest and 85% storage humidity) on day 1. The highest percentage of broken rice was the treatment of A1B2 (rough rice MC on harvest and 85% storage humidity) on day 1, while the lowest percentage of broken rice was the treatment of A3B1 (18% MC and 75% storage humidity) on day 4. The highest percentage of minute rice was the treatment of A1B2 rough rice MC on harvest and 85% storage humidity) on day 7, while the lowest percentage minute rice was the treatment of A3B1 (18% MC and 75% storage humidity) on day 7. In addition, the yield of milled rice decreased after seven days of storage. The highest percentage of whole rice (38,68%) after seven days of storage was in A3B1 treatment (18% MC and 75% storage humidity) and it was classified in grade VI in Indonesia National Standard (SNI) No.6128:2008 (≥35%). The highest percentage of head rice (44,25%) was in A3B1 treatment (18% MC and 75% storage humidity) and it was classified in grade V in SNI. The rough rice could not be delayed drying more than two days to produce highest whole rice which storage in 75% humidity and the rough rice could not be delayed drying more than five days which storage in 18% MC and 85% storage humidity condition. The rough rice could not be delayed drying more than four days to produce highest head rice which storage in 18% MC and 75% storage humidity condition and the rough rice could not be delayed drying more than five days which storage in 18% MC and 85% storage humidity. The rough rice dry postponed to produce the greater percentage of milled rice (highest of whole and head rice and lowest of broken and minute rice) was on the 18% MC and 75% storage humidity condition.
