Abstract
Black garlic is obtained from fresh garlic (Allium sativum) which has a higher bioactive content than fresh condition. Therefore, utilization of black garlic as antibacterial agent are less than garlic. This study aims to determine the effectiveness of black garlic as an antibacterial agent by in vitro assay with Minimum Inhibitor Concentration (MIC) and Minimum Bactericidal Concentration (MBC). This research was conducted at Laboratorium budidaya perairan, Aquaculture Study Program, Faculty of Agricultural, Sriwijaya University on May-June 2019. It used black garlic extract, garlic extract, tetracycline and Aeromonas hydrophila bacteria. The parameters was MIC and MBC value and phytochemical test including tannin, flavonoid, alkaloid and saponin. The results revealed that all phytochemical contents was positive for both black garlic and garlic. Garlic was able to inhibit bacteria growth until 50% at concentration 21,52% while black garlic was 9,83%. There were no MBC value for black garlic and garlic due to no colonies appeared on media even used the highest concentration. Keyword : Black garlic, Aeromonas hydrophila, antibacterial.
