Abstract
The objective of this research was to apply image processing technique to determinethe ripeness by fruit color and also the relation of color against physical and chemical characteristics of sweet fruit star. The research was conducted at Chemical Laboratory of Agricultural Products, Department of Agricultural Technology, Faculty of Agriculture, Sriwijaya University, Inderalaya. The research was conducted from June until December 2016. The research used descriptive method. Parameters measured were color, water content, texture, total acid, and total sugar. The result showed that the application of image processing technique had supported fruit sorting by looking at the percentage relation of yellowness and harvesting, physical and chemical of fruit. Average percentage of yellowness was 21.37% for 70 SBM days harvesting, 38.77% for 81 SBM days harvesting, 54.95% for 88 SBM days harvesting and 73.26% for 95 SBM days harvesting. The coefficient of determination of relation of yellowness and harvesting, water content, total sugar, total acid, texture, and color respectively were 0.984, 0.993, 0.998, 0.990, 0.998.
