Abstract

The objective of this research was to determine the effect of mango juice and skim milk addition on the characteristic of soyghurt. The research was conducted at Chemical of Agricultural Product Laboratory, Laboratory of Food Microbiology and Sensory Laboratory, Agricultural Technology Department, Agricultural Faculty, Sriwijaya University, from February 2017 to Agustus 2017. The research used a Factorial Block Randomized Design consisting of two factoers. The experiment was conducted in triplicates. The first factor was mango juice addition (0%, 10% and 20%) and the second factor was skim milk addition (10%, 20% dan 30%). The following parameters were observed, including physical (color), chemical (pH values, total reducing sugar, and total acid content), microbiological (lactic acid bacteria population) and sensory (rangking test for texture and hedonic for color, aroma and flavor). The results showed that the addition of mango juice had significant effects on color (lightness and chroma), pH values, lactic acid bacteria population, total reducing sugar, whereas the concentration of skim milk had significants effect on pH values, total acid content, lactic acid bacteria population, and total reducing sugar. Furthermore, interaction of two factors showed significant effect on total reducing sugar. The treatment of A2B3 (mango juice concentration 10% and skim milk concentration 30%) was the best treatment with the highest level of acceptance, based on hedonic test, with characteristics as follow: lightness of 72.09%, chroma of 21.54%, hue of 71.72o, pH value of 4.26, total acid content of 1.68%, lactic acid bacteria population of 9.55 log cfu/mL, and total reducing sugar of 1.08%.
