Abstract

The objective of this research was to determine the effect of Tween 80 and drying time on the physical and chemical characteristics of bamboo shoot flour (Dendrocalamus asper) processed by foam mat drying method. The experiment was conducted at the Chemical Laboratory of Agricultural Product Processing Technology Departement of Agricultural Technology, Faculty of Agriculture, Sriwijaya University, from January to May 2017. The experiment was conducted by Factorial Completely Randomized Design with two factors and was carried out in triplicates. The first factor was the foaming agent addition (Tween 80 0.5% and 1%, v/v) and the second factor was drying time (4, 5, 6, and 7 hours). The observed parameters were physical characteristics {yield, browning index, bulk density, and color (L*, a*, b*)} and chemical characteristics {water content, ash content and crude fiber content}. The results showed that the foaming agent addition significantly affected yield, moisture content, bulk density, crude fiber content, ash content and L*, whereas drying time significantly affected yield, moisture content, bulk density, crude fiber, ash content, color (L*, a*, b*) and browning index. Furthermore, the interaction of the two factors showed no signicant effect on all parameters.
