Abstract

The objective of the research was to analyze the effect of addition pineapple juice on the characteristics of Curcuma xanthorriza Roxb. juice drink. The research was conducted at Chemical of Agricultural Product Laboratory, Agricultural Technology Department, Agricultural Faculty, Sriwijaya University, started from February until Desember 2019. This research used non factorial Randomized (RAL) with one treatment factor namely ratio of pineapple juice and Curcuma xanthorriza Roxb. juice with the following levels: the concentration of pineapple juice and Curcuma xanthorriza Roxb. juice (90:10; 80:20; 70:30; 60:40; 50:50 (v/v)). Each treatment is repeated three times. The obsesved parameters were color (L*, a*, b), viscocity, stability, total dissolved solids, total acid, pH, and antioxidant activity. The results showed that ratio of Curcuma xanthorriza Roxb. juice and pineapple juice significantly affect the value of L* (lightness), b* (blueness), viscocity, total dissolved solids, total acid, and the antioxidant activity, but significantly decreased a* (redness), stability, and pH.
