Abstract

NAUFAL TAUFIQURRAHMAN. The Effect of Carageenan and Corn Starch Addition on Physical, Chemical and Sensory Characteristics of Ambon Banana (Musa paradisiaca L.) Sheet-Jam. (Suvervised by oleh FILLI PRATAMA and MERYNDA INDRIYANI SYAFUTRI). This study aimed to determine the effect of carageenan and corn starch addition on physical, chemical and sensory characteristics of ambon banana (Musa paradisiaca L.) sheet-jam. This study was carried out at Chemical of Agricultural Product Laboratory and Sensory Laboratory, Agricultural Technology Department, Agricultural Faculty, Sriwijaya University from April 2018 until July 2019. This study used Completely Randomized Factorial Design with two factors and each treatment was repeated three times. The first factor was carageenan concentrations (2%, 3%) and the second factor was corn starch concentrations (0.5%, 1%, 1.5%). The parameters of this study was physical characteristic (texture and color), chemical characteristic (moisture content, total dissolved solids and crude fiber), and sensory characteristics using hedonic test (color, flavor, taste). The result showed that the carageenan concentrations could improved moisture content and total dissolved solids, but reduce texture. The corn starch concentrations could improved moisture content, but reduce color score (L*) and texture. The interaction of those factors had not significant effect to all parameters. Furthermore, the result showed that moisture content of ambon banana sheet-jum had suitable on Indonesian National Standard but not to total dissolved solids. Based on hedonic test, A2B1 (carageenan concentrations 3%, corn starch concentrations 0,5%) was the best treatment.
