Abstract
The purpose of research was to investigate the characteristic of waterln taro starch extracted with some concentration of NaOH solvent. The research used Randomized Block Design with diffrence concentration of solvents as treatments of NaOH concentration 0%, 0,25%, 0,50%, 0,75%, 1,00% and each was replicated three times. The result of reseach showed the diffrence concentration of NaOH treatments significantly affected yield, starch content, amylose content, and amylopectin content. The average yield of waterland taro starch ranged from 71,15% to 72,93%, starch content ranged from 23,55 to 30,30% amylose content ranged from 6,097 to 8,082% and amylopectin content ranged from 17,45 to 22,22%.
