Abstract

SUMMARY JOKO DWI PRASETIO. Use of Ozonation Equipment as Disinfectants to Kkow the Physical Characteristics of Mas Banana Fruit (Musa acuminata L). (Supervised by ENDO ARGO KUNCORO and TRI TUNGGAL). The objective of this study was to determine the effect of ozone on the physical characteristics of banana mas using an ozone generator type 7500 mg / day. This research was conducted from February to December 2018 at the Energy and Electrification Laboratory, Agricultural Technology Department, Faculty of Agriculture, Sriwijaya University, Ogan Ilir, South Sumatra. This study was conducted using an experimental method, by conducting experiments on three samples of banana mas fruit and repeated three times. The duration of ozone gas administration in the sample is zero minutes for sample one as a control, one minute for sample two, and two minutes for sample three Parameters measured are power, weight loss, texture, total sugar content, and ozone period. The power needed for one repetition is 0.0021 kWh which is measured using Powermeter. The lowest decrease in weight loss was found in the third sample on each replication with an average decrease of 1.58% when compared to sample one (2.31%) and sample two (1.59%). Texture measurement is done using a texture analyzer. Banana mash fruit texture has decreased due to fruit ripening process. On the first test results obtained a decrease of 42.11%, 34.59% and 32.93%. Deuteronomy two has a decrease of 48.95%, 89.23%, and 65.15% and the third test has a decrease in texture of 17.12%, 18.67% and 16.67%. The results of the measurement of sugar levels indicate that the longer the banana mas is stored, the sugar content decreases, this is because the banana mas undergoes a process of decay. On test one, the results of the decline were 3.5%, 4.9% and 4.5%. Deuteronomy two has a decrease of 3.9%, 5.1% and 5.3%. and the third test has a decrease in sugar content of 4.1%, 2.8%, and 2.2%. The amount of ozone gas used in this study is 0.32 g for a two minute trial. The conclusion of this study is the amount of power needed for one repetition of 0.0021 kWh. The use of an ozone generator for 2 minutes (0.47 g) shows that the administration of ozone gas can suppress fungal growth and reduce black spots so that the fruit can be stored for 3 days longer than the control for 7 days.
