Abstract

The purpose of this research was to know the content phytochemical compounds and antibacterial activity of Chinese Water Chesnut (Eleocharis dulcis) extract. This research was conducted from April 2017 until October 2017 using experimental laboratory method and data analysis was done descriptively. The research stages included sample preparation, extraction, yield calculation, phytochemical test (alkaloid, flavonoid, steroid, saponin, phenol, tannin, terpenoids), antibacterial activity test and determination of minimal inhibition concentration. Extraction by maceration using n-hexane, ethyl acetate, and ethanol 70% respectively yielding 0.963 g (0.076%), 7.068 g (0.589%), 57.3362 g (4.778%). Chinese water chesnut extract in first level maceration using n-hexane solvent containing terpenoid and flavonoid groups. Extracts at second level maceration using ethyl acetate solvent containing steroid, terpenoid, and flavonoid compounds. The extract at the third level maceration using 70% ethanol solvent contains steroid, terpenoid, tannin, saponin, flavonoid, and phenol compounds The antibacterial activity test indicated the presence of Chinese water chestnut extract can inhibit some pathogenic bacteria (Vibrio cholerae) and food spoilage bacteria (Pseudomonas aeroginosa and Bacillus subtilis) to produce an average diameter of inhibition at a concentration of 2.000 ppm. The MIC test showed extract obtained after first level of maceration with n-hexane solvent was able to inhibite the Bacillus subtilis at 15 mg / ml concentration, while the of Chinese Water Chesnut MIC of the third level extract 70% using ethanol solvent was 10 mg / ml.
