Abstract

The purpose of this research to determine the effect of solvent type and ratio between avocado pulp and solvents on the characteristics of avocado oil by maceration method. This research was conducted in June 2019 until August 2019 at the Laboratory of Agriculture Product Chemistry of the Department of Agriculture Technology, Faculty of Agriculture, Sriwijaya University. This research used completely factorial randomized complete random design (RALF) with two factor of treatment, A factor is solvent type (A1=n-hexsane, A2= ethanol 96%, and A3= combination of n-hexane and ethanol 96%) and B factor is ratio avocado powder to solvent (B1= 1:3 and B2= 1:6). The parameters observed included physical characteristic (color), chemistry (water content, acid numbers, saponification numbers) and yield. The result showed that the type of solvent significantly affected yield, color, water content, and acid number. The result showed that the ratio of avocado powder to solvent significantly affected yield and water content. The best treatment of avocado oil that is in the A1B1 treatment has a moisture content of 2.91%, acid number at 3.14%, lightness at 31.43%, and hue at 40.67%.
