Abstract

Nata de coco is one example of food the most Indonesian people likes. Temulawak (Curcuma xanthorrhiza Roxb.) is a medicinal plant that usually used as traditional medicine, temulawak’s rhizome contains curcumin compounds which are considered efficacious as a hepatoprotector. In this study, nata de coco was made with a mixture of temulawak’s rhizome extract, and then its called as nata de coco temulawak. The purpose of this study was to determine the potency of nata de coco temulawak as a functional hepatoprotector food by measuring the levels of SGPT, SGOT, and ALP on healthy female test subjects, and to determine the quality of nata de coco temulawak according to SNI (Indonesian National Standard). The test subjects were divided into 2 groups, namely the normal group who consumed nata de coco, and the test group who consumed nata de coco temulawak 3 times a day for 30 days. Measurement of hepatoprotector parameter level was carried out on days 0 and days 31. The results showed that there was a decrease in the mean ALP level in the test subjects, but SGPT and SGOT levels had increased between before and after treatment in all groups. The percentage decrease in ALP levels in the normal group was 9.70% while in the test group it was 34.07%. Nata de coco temulawak has met SNI standards including organoleptics, foreign materials, total weight, crude fiber, food additives, metal contamination, and microbial contamination. Except for the amount of reducing sugar where the results obtained are below the normal threshold.
