Abstract

The objectives of this study were identify the physical, chemical, and, sensory characteristics of lotus and soybean milk and to find out the best treatment in making them. This research was conducted in February 2019 to April 2019. The research method of this study used a Randomized Block Desigen (RBD) with 3 treatment with 3 treatments with 3 repetitions: A0= Lotus 0% Soybean 100%, A1= Lotus 25% Soybean 75%, A2= Lotus 75% Soybeans 25%, A3= Lotus 100% Soybeans 0%. Test parameters performed were physical (Lightnest, Chroma, Hue) chemical test (water, ash, protein, fat, carbohydrate, and, antioxidant) and sensory test (aroma, appearance, taste). The results of the physical test showed that the lightnest value of vegetable milk ranged from 52.46% - 62.26%. Chroma values ranged from 12.73% - 3.16%. And the value of the hue ranged from 73.160 – 56.70. On the results of chemical tests the results obtained in testing the levels of water, protein, fat, and, carbohydrate have a significant effect, but have no significant effect on ash content. Antioxidant activity of vegetable milk in IC50 values ranging from 1247.83 ppm – 2245.71 ppm. Sensory analysis results show that the treatment has no significant effect on aroma, and, taste, but has a significant effect on appearance. Overall the addition of 25% lotus seeds to the manufacture of vegetable milk has the same characteristics as soy milk. Keyword: Milk, lotus seeds, soybean.
