Abstract

The objective of this research was to determine virulence trait, functional property and phenotypic characteristic of lactic acid bacteria (LAB) isolated from fermented bamboo shoots. The reserch were carried out at Agricultural Product Microbiology laboratory, Agricultural Product Technology Study Program, Department of Agricultural Technology, Agricultural Faculty, Universitas Sriwijaya, from November 2019 to May 2020. The research used an explorative method and obtained data were presented in tabulation. All experiment was conducted in triplicates. The observed parameters were virulence traits (gelatinase and lipase activities), functional property (caseinase activity) and the phenotypic identification of lactic acid bacteria isolates using API 50 CHL (API-Biomerieux). The results showed that from 24 samples of LAB isolates, there were 2 isolates possessing caseinase activity (S2-4 (1) 1 (Lactobacillus) and S2-4 (2)1 (Lactobacillus)), 3 isolates with gelatinase activity (S1-4 (2)1 (Lactobacillus), RT 2-4 (1) 2 (Lactobacillus), and RT -4 (2)2 (Lactobacillus)) and 2 isolates showing lipase activity (S1-4 (1)2 (Lactobacillus) and R1-4 (1)1 (Lactobacillus)). Sugar fermentation patterns analysis revealed that the species of Lactobacillus plantarum and Weisella confusa played the major role in bamboo shoot fermentation. .
