Abstract

The Objective of this research was to determine to identify chemical compounds in civet coffee originating from the village of Segamit and compare the characteristics of civet coffee in the village of Segamit with the Indonesian National Standardization (SNI). This research was conducted at the Palembang Industrial Research and Standardization Center. The research used a Factorial Randomized Block Design with two treatment factors and each treatment was conducted in triplicates. The first factor is the roasting temperature (190˚C, 200˚C, and 210˚C) and the second factor is the roasting time (8 minutes, 10 minutes, 12 minutes). The observed parameters were physical (identification of length and width in civet coffee beans, physical defects in civet coffee beans, coffee bean density test), chemical (water content, ash content, ash calibration, lead, copper, zinc, mercury, arsenic, coffee essence and caffeine). The results showed that the roasting temperature of Segamit civet coffee beans significantly affected the aroma, taste, acidity, sweetness, aftertaste, balance, body, uniformity, and overall. The roasting time of Segamit civet coffee beans significantly affected the clean cup. Segamit civet coffee powder in this study has met the Indonesian National Standard 01-3542-2004. The best treatment is a roasting temperature of 210˚C with a roasting time of 8 minutes. Keywords: civet coffee, roasting, Indonesian National Standards coffee powder.
