Abstract
This study aims to determine the effect of microencapsulation on the probiotic characteristics of Enterococcus faecalis. Three treatments used in this study were bacterial cells without encapsulation (control), bacterial cells encapsulated using spray drying method, and bacterial cells encapsulated using freeze drying method, and each other treathment was repeated three times. The data analysis was carried out using independent sample t-test. The survival rate of probiotic bacteria using the freeze drying method is lower than that of free cells and cells encapsulated using spray drying method which is 75% which means the use of freeze drying method is less effective in protecting bacterial cells from acidic conditions. The spray drying method is more effective in protecting the bacteria from bile salt secretion because the survival rate of probiotics is higher than that of free cells and cells encapsulated using freeze drying that is equal to 97.64%
