Abstract

Banana (Musa Parasidiaca) is one of fruit commodities that is manageable to turn into flour and it can substitute wheat flour in the process of making bangkit cookie. This research aimed to understand the effect of substituting several types and concentration of banana flour on physical, chemical and organoleptic characteristic of bangkit cookie. Method used in this research was Factorial Randomized Block Design (RAKF) with two factorial treatments, which were (saba banana and cooking banana) and types of banana flour concentration (20 % (b/b), 30 % (b/b), 40 % (b/b), 50 %). Further test was continued by doing Honest Significant Different Test. Parameters observed were physical characteristic (degree of fluffiness, texture and color), chemical characteristic (water content, ash content and reducing sugar content) and hedonic test (flavor, taste, texture and color). The result of this research showed that the treatment of flour type had significant effect to lightness, hue, reducing sugar. Concentration of banana flour significantly affected lightness, chrome, hue, ash content, and reducing sugar. Interaction between type and concentration of banana flour had significant effect to reducing sugar parameter. The selected treatment was A2B1 (cooking banana 20%).
