Abstract
This study aims to determine the cost and profit structure in the culinary business of tekwan, model and pempek in Palembang. The data used are primary and secondary data with a population of 115 and 20 samples determined based on the 2 most distributed locations. The analysis technique used is qualitative descriptive analysis and t-test different test. Research results The cost structure of tekwan culinary business, models and pempek as well as tekwan culinary business and models in Palembang where the percentage of costs is dominated by raw material costs, while the use of the lowest costs is equipment costs. In tekwan culinary business, model and pempek profit is the maximum profit. In the different t-test there are significant differences in costs and profits between tekwan and model culinary businesses and models with tekwan, model and pempek culinary businesses.
