Abstract

The objective of this research was to know the effect of oyster mushroom and mocaf concentrations on physical, chemical and sensory characteristics of prawn cracker’s. The experiment was designed as a Factorial Completely Randomized Design with two treatment factors and each treatment was repested three times. The first factor was mocaf concentration variances (A) (15% and 25% mocaf) and the second factor was oyster mushroom concentration variances (B) (25%, 50% and 75% oyster mushroom). The observed parameters on prawn cracker’s were physical characteristics (hardness, color and degree of swelling), chemical characteristics (water content, ash content and protein content) and sensory characteristics involving hedonic test (crispness, taste, color and aroma). The results of this experiment showed that mocaf concentration had significant effects on hardness, water content and lightness. Oyster mushroom concentration had significant effects on hardness, lightness, redness, yellowness, chemical characteristics. The interaction of the two treatment factors had significant effects the water content and sensory characteristics (taste and color). Hedonic test showed that the most preferred prawn crackers was made of A1B2 treatment (15% mocaf and 50% oyster mushroom) based on the average value of hardness 213,47 gf and water content 3.35%. The protein content of prawn crackers was accordance with the standards (SNI 2714.1:2009) which is categorized as first level of prawn crackers.
