Abstract

This study aims to determine the temperature of the sand, shell sand as a medium for heat transfer and the characteristics of the kemplang it produces. This research was conducted from March to December 2020. The research method used a randomized block design (RBD) model. With 4 treatments and using 3 repetitions. The treatments given were 10 mesh size sand, 30 mesh size sand, 10 mesh scallop shell sand and 30 mesh clamshell sand. Analysis on sand media is temperature measurement. Analysis on kemplang includes physical tests (texture, swelling, color), organoleptic testing, hedonic and chemical quality tests (moisture content). Sand and shell sand media can reach a maximum temperature of 192°C and 170°C. The process of conducting heat in sand media is faster than shell sand. Based on the analysis of the variety of heat media treatments used, the results were not significantly different on the measured parameters except for the hue and appearance values (organoleptic test). Based on all the test results, it can be concluded that clam shell sand can be used as an alternative roasting medium.
