Abstract

Street food snacks are easily contaminated with lead (Pb) from burning gasoline. Street food sold on the side of the road is usually street food. School snacks located on the side of the road are prone to contamination with lead chemical contaminants, besides that, cooking oil is repeated, and the use of newspaper is also a risk factor for lead chemical contamination. Pb has a persistent nature which can cause epilepsy, hallucinations, delirium, and cerebral damage. Snack food has an important role in elementary school children because it affects growth and learning achievement so it is important to analyze the safety of street food in schools. Aimed at assessing the amount of risk arising from the consumption of lead-contaminated street food due to the chemical contamination of lead vehicle fumes. Including univariate analysis research with the method of environmental health risk analysis (ARKL). The study consisted of 96 people with food samples, namely fried tofu, fried bakwan, fried sausage, fried sempol, and fried tempeh. Heavy metal analysis was carried out by using the Atomic Absorption Spectrophotometry (AAS) method because of its high sensitivity, easy, cheap, simple, fast, and specific concentration for small concentrations such as lead. Based on the results, the highest lead concentration was in fried tofu 0.16 mg/kg. The results of the analysis show that students of SD Muhammadiyah 6 Palembang have a risk of causing-carcinogenic effects realtime where 7.2% of 96 people have an RQ value> 1. For exposure real-time carcinogenic where 4.1% of 96 respondents have an ECR value> 10-4 so that it can be said to be at risk for carcinogenic diseases. Students are advised to consume fried tofu according to the recommended portion weight, take food supplements such as Cu, Zn, Fe, Mg or coconut water, and bring their lunch from home.
