Abstract
Buah mangrove memiliki potensi untuk dijadikan sebagai bahan pangan alternatif. Kabupaten Banyuasin memiliki ekosistem mangrove yang cukup luas. Nypa fruticans dan Sonneratia caseolaris merupakan 2 spesies mangrove yang cukup dominan tumbuh di daerah Banyuasin dan memiliki potensi untuk dimanfaatkan sebagai bahan pangan. Penelitian ini dilakukan untuk menganalisis kadar karbohidrat dan protein pada buah N.fruticans dan S. caseolaris dan potensinya menjadi pangan alternatif. Penelitian ini dilaksanakan pada Bulan September hingga Oktober 2020. Sampel N. fruticans dipetik di sekitar pemukiman Desa Nelayan Sungsang sedangkan sampel S. caseolaris dipetik di daerah Tanjung Carat, Kabupaten Banyuasin. Analisis kadar karbohidrat dan protein sampel dilakukan dengan analisis proksimat. Berdasarkan hasil analisis proksimat, N. fruticans mengandung 5,26% kadar protein, 42,87% kadar air, 1,41% kadar abu, 0,19% kadar lemak dan 50,27% kadar karbohidrat, sedangkan buah S. caseolaris mengandung 5,84% kadar protein, 79,20% kadar air, 1,36% kadar abu, 0,36% kadar lemak dan 13,24% kadar karbohidrat. Kadar karbohidrat buah N. fruticans lebih tinggi jika dibandingkan dengan buah S.caseolaris sehingga memiliki potensi untuk dikembangkan menjadi bahan pangan berkarbohidrat. Hasil lain menunjukkan juga bahwa buah N. fruticans dan S. caseolaris berpotensi untuk menjadi pangan alternatif dengan persentase kadar protein yang lebih tinggi dibandingkan dengan beberapa pangan alternatif yang ada di Indonesia seperti ubi jalar, beras merah dan sagu. Kata Kunci : Banyuasin, Karbohidrat, N. fruticans, proksimat, protein, S. caseolaris. The fruits of mangrove has the potential to be used as an alternative food. Banyuasin Regency has a large enough mangrove ecosystem. Nypa fruticans and Sonneratia caseolaris are 2 species of mangroves that are quite dominant in Banyuasin coastal and have the potential to be used as food. This research was conducted to analyze the levels of carbohydrates and protein in the fruit of N. fruticans and S. caseolaris and their potential as an alternative food. This research was conducted from September to October 2020. N. fruticans sample was taken around Sungsang Village, while S. caseolaris sample was taken from the Tanjung Carat area, Banyuasin Regency. The analysis of the carbohydrate and protein content of the sample were carried out by using proximate analysis. Based on the proximate analysis, the contains of carbohydrate, protein, fat, moisture and ash in N.fruticans fruit were 50,27%, 5,26%, 0,19%, 42,87% and 1.41% respectively. While the contains of carbohydrate, protein, fat, moisture and ash in S.caseolaris fruit were 13,24%, 5,84%, 0,36%, 79,20% and 1,36% respectively. The carbohydrate content of N. fruticans fruit is higher when compared to S. caseolaris fruit so that it has the potential to be developed into carbohydrate food. Other results also showed that the fruit of N. fruticans and S. caseolaris had the potential to become alternative foods with a higher percentage of protein content compared to some alternative foods in Indonesia such as sweet potato, brown rice and sago.
