Abstract

Penelitian ini bertujuan untuk mengetahui pengaruh lama waktu perendaman dalam asap cair terhadap sifat fisik, kimia dan sensori pada ikan lele (Clarias sp.) asap dengan penambahan bumbu. Metode penelitian ini menggunakan rancangan acak kelompok (RAK) dengan satu faktor perlakuan dan dilakukan dengan 3 kali ulangan. Perlakuan yang digunakan yaitu perbedaan lama waktu perendaman dalam asap cair 0 menit, 30 menit, 60 menit, 90 menit. Parameter penelitian ini meliputi analisis kimia (kadar air dan kadar abu), analisis fisik (kekerasan dan warna), serta analisis sensori (penampakan, aroma, rasa dan tekstur). Hasil penelitian menunjukan bahwa perlakuan perbedaan lama waktu perendaman dalam asap cair memberikan pengaruh nyata terhadap kekerasan (59,13-172,53), dan kandungan fenol, tetapi tidak berpengaruh nyata terhadap kadar air, kadar abu, dan warna. Hasil analisis sensori menunjukan bahwa perlakuan berpengaruh tidak nyata terhadap penampakan, aroma, rasa dan tekstur. Perlakuan terbaik dari penelitian ini yaitu pada perlakuan P1 dengan lama waktu perendaman dalam asap cair 30 menit.
