Abstract
The objective of the research was to analyze effect of sesame oil (Sesamum indicum L.) addition on characteristics physic, chemical and organoleptic of meatball. The research was conducted at Chemistry Laboratory of Agricultural Product and Sensory Laboratory, Agricultural Technology Department, Faculty of Agriculture, Sriwijaya University from Maret 2017 to Desember 2017. The research used a Completely Randomized Design and each treatment was repeated three times. Sesame oil concentration (0%, 1%, 2%, 3%, 4% and 5%) was added on meatball and each treatment was repeated three times. The observed parameters were physical characteristic (texture), chemical characteristic (moisture content, ash content, protein content, fat content and antioxidant activity) and hedonic test (color, aroma, after taste and overall acceptance). The results showed sesame oil addition on meatball had significant effect on texture, moisture content, ash content, protein content, fat content and antioxidant activity. The addition of sesame oil 2% (A2) was the best treatment based on characteistic physic, chemical and organoleptic properties. The characteristic meatball were texture of 100.8 gf, moisture content of 54.512%, ash content of 2.072%, protein content of 18.905%, fat content of 0.982% and antioxidant activity of 138.553 ppm, hedonic score for color of 3.036, aroma of 2.821, after taste of 3 and overall acceptance of 3.179.
