Abstract
The objective of this research was to determine the effect of concentration of palm sugar and red ginger extract (Zingiber officinale var Rubrum rhizoma) on chemical, physical, and organoleptic properties of functional beverage rosella (Hibiscus sabdariffa L.). The research was designed as Factorial Completely Randomized Design with two treatments (factors) and triplicates. The first factor was plam sugar concentration (25%, 30%, 35%) and the second factor was concentration of ginger extract red (15%, 20%, 25%). The following parameters were observed including physical characteristics, i.e color, and dissolved solid total, chemical characteristic such as pH values, total reducing sugar, IC50, and anthocyanins value. Moreover, sensory characteristic (colour, texture, and aroma) were also analyzed. The results showed that the addition of plam sugar had significantly affected on lightness, redness, yellowness, IC50, pH value, reducing sugar content, as wll as dissolved solid total. Whereas the concentration of red ginger had significantly affected on the value of anthocyanin content, pH value, reducing sugar, as well as total dissolved solids.Treatment of A3B3 (palm sugar concentration 35% and red ginger concentration 25%) was the best treatment based on taste sensory. The value were: pH value 3,64, dissolved solid total 8,40%, sugar content reduction 4,99%, IC50 105, 32μg/mL, anthocyanin values 38,87μg/mL, lightness 28,97, redness 2,40, and yellowness 0,23.
