Abstract
he objective of this research was to determine the effect of drying methods and rehydration physical characteristic of tekwan. This research was done in Biosystem and Chemical Agriculture Product Laboratory Agriculture Technology Department, Agricultural Faculty, Sriwijaya University, South Sumatera from April to November 2017. This research used a Factorial Randomized Block Designd with two treatments and three replications for each treatment. The first treatments were drying methods (vacuum drying and oven drying) and the second treatments were rehydration method (rehydration with temperature 28oC, rehydration with temperature 70oC, and steaming). The parameters were Water Absorption Capacity (WAC), Dry Matter Holding Capacity (DHC), Rehydration Ability (RA), texture, and the colors include lightness, chroma, and hue. The result showed that drying and rehydration method had a significant effect on Water Absorption Capacity (WAC), Dry Matter Holding Capacity (DHC) Rehydration Ability (RA), texture (gf), and color. The treatment of A1B2 (vacuum drying and immersion method 70oC) has the best characteristic with Rehydration Ability (RA) 1,36, texture value 104,84 gf, lightness 63,53%, chroma 8,40, and hue 62,37o
