Abstract
Problems appeared in increasing added value and diversification of cocoa products is that the quality of dry cocoa beans produced by Indonesian farmers is still low due to inadequate processing of cocoa beans. This study aimed to determine the physical and chemical properties of cocoa nibs by analyzing the effect of raw material treatment and pressurized roasting methods in order to obtain an optimal cocoa bean processing method. This study used a Factorial Completely Randomized Design (FCRD) with two treatment factors, which are levels of puffing pressure at three different levels (3, 4 and 5 Bar) and the type of raw material consisting of 3 levels (fermented, unfermented, and Tape yeast-based fermented cocoa bean). The results showed that puffing pressure had a very significant effect on water content and had a significant effect on carbohydrates content, fat, total polyphenols, antioxidant activity, taste and aroma. The higher the puffing pressure, the higher the carbohydrate content, while the water, fat, total polyphenols, antioxidant activity, taste and aroma decreased. The type of raw material has a very significant effect on the ash content, carbohydrates, the color intensity of L * (lightness) and a * (redness), and has a significant effect on fat content, antioxidant activity, taste and aroma. The highest fat content, antioxidant activity and organoleptic properties were produced by spontaneously fermented cocoa nibs which was roasted at a pressure of 3 Bar (A1B1).
