Abstract

Background: Canteen of an industry plays important role in maintaing employee's health. The purpose of this study is researching food higiene sanitation of developing countries' workers especially Indonesia that seldom be published by analyzing food higiene sanitation from canteens of PT. X, paper industry in South Sumatera. Method: Examination of 19 food handlers, 19 stool cultures, 12 food samples, 6 drinking water samples. Results: Data showed 5.2% of stool cultures positive for Salmonella, 100% of cutleries have bacteriologic amount more than the national standard, 8,3% of food samples were positive for E. coli, 50% of drinking water samples were positive for E. coli. The carrier prevalence was 5.2% (1 from 19 food handlers); significant negative correlation between sanitation facility aspect and E. coli in food (CC -0.6324555, 95% CI -0.9772 till -0.0665); significant positive correlation between cutleries aspect and E. coli in food (CC 0.5, 95% CI 0.0411 till 0.8699); significant positive correlation between cutleries aspect with E. coli in drinking water (CC 0.7071068, 95% CI 0.2254 till 1.1228). Conclusion: Standardly starting canteen from building till equipments; food handlers pre-employment and regular medical examination; food hygiene sanitation training; sudden regularly canteen hygiene sanitation audits are needed for better implementation of food hygiene sanitation in accordance with national standard and best practices.
