Abstract

This study aims to make a functional drink with a combination of salak bean coffee, gambier extract and ginger powder and to see the effect of adding gambier extract and ginger powder to the quality of salak bean coffee. This research will be carried out in the Agricultural Product Chemistry Laboratory, Microbiology Laboratory and Sensory Laboratory of the Faculty of Agriculture, Sriwijaya University, Palembang. This research will begin in September until completion. This study used a Factorial Completely Randomized Design (RALF) with 2 treatment factors, namely Factor (A) Duration of roasting of zalacca seeds (B) Formulation of salak bean coffee drink with a combination of gambier extract and ginger powder with 3 treatment levels. Each treatment was repeated three times. The parameters measured were moisture content, ash content, antioxidant activity, brownish index, pH of the solution, total phenol. The results showed that the addition of gambier extract and ginger powder had a significant effect on moisture content, antioxidants, brownish index, phenol and physical characteristics (color) of lightness, redness and yellowness in the functional drinks of salak bean coffee. The duration of roasting had a significant effect on the moisture content, ash content, antioxidants, brownish index and pH of the resulting salak seed coffee. A1B3 treatment is the best treatment in the process of making a functional drink of salak bean coffee based on the highest score from the water content test, namely 3.56%, ash content of 3.76%, antioxidant of 40.24% and a brownish index of 2.01 and color ( lightness of 39.35, Redness of 0.95 and Yellowness of 17.86).
