Abstract
This research aimed to determine the physical and chemical characteristics of jackfruit abon with the addition of grated young coconut. This research used a Factorial Completely Randomized Design (RALF) with two factors. The treatment was repeated 3 times. The first factor is the concentration of jackfruit (A1 = 40% and A2 = 50%) and the second factor is the concentration of young coconut (B1 = 5%, B2 =10%, and B3 = 15%). The parameters observed included physical characteristics (color), chemical characteristics (moisture content, ash content), and sensory characteristics using the hedonic test (appearance, taste, texture, and aroma). The best treatment parameters include chemical characteristics (fat content, protein content). The result showed that the concentration of jackfruit had a significant effect on color (lightness (L*), redness (a*), dan yellowness (b*)). While the consentration of young coconut had a significant effect on color (yellowness (b*)) and ash content. The interaction of jackfruit concentration and young coconut concentration has a significant effect on sensory characteristics (appearance and scent) of the resulting jackfruit abon. Jackfruit abon in A2B3 treatment (50% jackfruit and 15% young coconut) is the best treatment based on the highest score of hedonic test (5,35 for appearance and 3,12 for scent).
