Abstract

Zinc and Iron are mineral micronutrients that are needed by the body to maintain optimal life. Lack of zinc levels in saliva can reduce the sensitivity of the sense of taste in children which can affect appetite in children and can also interfere with the nutritional status of children. The purpose of this study was to analyze the relationship between salivary zinc and iron levels with the nutritional status of elementary school children in the working area of the Air Beliti Health Center in 2021. Methods: This study was quantitative with a cross-sectional design. The population in this study were elementary school children with a total sample of 76 children who met the inclusion criteria and exclusion criteria. Characteristic data were obtained through a questionnaire, while the levels of zinc and iron in saliva were measured using ELISA.Results:Based on the results of the study, the average zinc level in stunted children was 1.96 while the average salivary iron was 2.43. There was an effect of salivary zinc and salivary iron levels on the nutritional status of children (p<0.05). There is a relationship between gender (p=0.003 OR=4.69), parents' income (p=0.019 OR= 3.34), and zinc intake (p=0.024 OR=3.78) with the nutritional status of elementary school children. The results of the logistic regression test showed that the dominant variable affecting the nutritional status of children was sex Exp (B) = 5.796 CI 95% = 1.84-18.22). Conclusions and Suggestions: From the results obtained the influence of salivary zinc and iron levels on the nutritional status of children and there is a relationship between sex, parental income and zinc intake.
