Abstract
Telah dilakukan analisis kualitatif dan kuantitatif asam lemak tak jenuh omega-6 pada minyak ikan Mujair yang berasal dari pasar Indralaya dengan menggunakan alat kromatografi gas dan penentuan karakterisasi minyak ikan Mujair yang meliputi bilangan asam, bilangan penyabunan dan bilangan iod. Hasil penelitian terhadap dua sampel minyak ikan Mujair dengan berat 665 gram dan 726 gram diperoleh kadar minyak rata-rata 4,369%, bilangan asam rata-rata 0,97 mgKOH/g, bilangan penyabunan rata-rata 102,026 mgKOH/g dan bilangan iod rata-rata 156,883. Kadar omega-6 total yang diperoleh dari minyak ikan mujair yaitu 0,014554%. Kata kunci: Mujair.
