Abstract

Studies have been conducted to determine the activity of antioxidant, antibacterial, and stability of the combination of rosella petal extract (Hibiscus sabdarijfa L), the skin of the mangosteen fruit {Garcinia mangostana. L) and secang wood (Caesalpenia sappan. L). Determination of antibacterial activity was tested against Bacillus subtilis and Escherichia coli using the agar diffusion method. The antioxidant activity studied by the method of 1.1 diphenyl-2-pikrilhidrazil (DPPH). The stability assay of those combination was conducted against the changes of pH and light (UV light). The results showed that the antioxidant activity of those natural pigment combination have IC50 value 30.235 ppm. Minimum inhibitory concentration (MIC) of those combination pigment against B. subtilis and E. coli is the same and value 5%. From stability assay showed that pH and light effect the stability of those combination pigment. Irradiation with UV light (25 watts) also effect the stability of the combination pigment.
