Abstract

The research about "The Effect of Heating, Storage and The Addition of Antioxidants BHT (Butyl Hydroxy Toluene) to The Quality of Ketapang Seeds Oil (Cattapan Terminalis Linn.) and The Kinetics of Oxidation Reactions" has been done. The best research result of BHT concentration is BHT 0.02% w/w of the storage time based on the changing number of peroxide. The result obtained of the reaction order for ketapang seeds oil without heating and heated during its storage is an order 1. The oxidation reaction rate constant for the oil without heating 0.0887/ day and the oil which is heated 0.0896/day and the activation energy of ketapang seed oil is 67.6046J/mol K. The peroxide number until 14th day of storage for ketapang seed oil without heating ((C0) control) is 12.3 mek/kg of oil, ketapang seeds oil which is heated in temperature 200°C for 2 hours ((Cl) control) is 41.2 mek/kg of oil, ketapang without heating and added with BHT 0.02% is having no changing that is in the amount of 2.5 mek/kg of oil and the Ketapang seeds oil which is heated in temperature 200°C and added with 0.02% BHT is having no changing that is in the amount of 16.4% mek/kg. The quality of oil obtained from the analysis of initial ketapang seeds oil which is 0.1079% of water content, 7.1046 mgKOH/g oil of acid value, 205.0114 mg KOH/g oil of saponification value, 0.8944 g/mL of density, 1.44747 of refiactive index. For ketapang seeds oil after the addition of the best BHT is 0.02% BHT which is 0.3919% of water content, 13.6700 mg KOH/g oil of acid value, 197.1247 mg KOH/g oil of saponification value, 0.9018 g/mL of density, 1.44914 of refractive index. Ketapang seed oil fatty acid determined on a CG (Gas Chromatography). The result of fatty acid of ketapang seed oil content is lauric acid, myristic acid, palmitoleic acid, palmitic acid, oleic acid, stearic acid, linoleic acid, linolenic eicosenoic acid, eicosanoic acid, behenaic acid, docotetrasanoic acid.
