Abstract

The increase in the production value of sembilang fish and mackerel in South Sumatra is assumed to also increase the volume of waste from the fish, one of which is bone that negatively impacts the environment. Therefore, it is necessary to know the content of calcium and phosphorus contained in the bones of sembilang fish and mackerel so that it can be used as alternative food processed products. The study was conducted from July to September 2021. Fish samples were taken as many as 3 size categories with the number of 3 tails in each category, samples of sembilang fish and mackerel were obtained from fish collectors in Sungsang Village, Banyuasin Regency. Calcium level analysis is conducted using Atomic Absorption Spectroscopy (AAS) and phosphorus using UV-Vis Sprektrophotometry, data analysis using anova test, BNT test, and independent t test. Based on the results of the analysis of sembilang fish bones in categories I, II, III contains 11.2%, 10.4%, 9.3% calcium and 0.0238%, 0.0207%, 0.0106% phosphorus. As for mackerel bones in category I, II, III contains 13.3%, 10%,7.4% calcium and 0.0271%, 0.0224%, 0.0116% phosphorus. Sembilang fish bones have the potential as a source of calcium greater than mackerel. While the bones of mackerel have a greater phosphorus content than sembilang fish. Based on the quality requirements of fish bone meal according to SNI 01-3158-1992 the content of calcium and phosphorus of sembilang fish bones and mackerel for categories I, II, and III does not meet the quality requirements I and II.
