Abstract

Tujuan penelitian ini adalah untuk mengidentifikasi jamur pada buah duku setelah perendaman dalam larutan kalsium klorida 1 %. Penelitian dilaksanakan pada bulan Febuari sampai Mei 2005 di Laboratorium Kimia Hasil Pertanian, Laboratorium Mikrobiologi Jurusan Teknologi Pertanian dan Laboratorium MIPA Biologi. Penelitian dilaksanakan menggunakan tabulasi dengan dua perlakuan dan dua ulangan. Perlakuan pertama adalah perendaman dalam larutan CaCh 1 % (Co = kontrol, Ci = CaCb 1 %, 27 °C, 6 menit, C2 = CaCb 1 %, 50 °C, 10 detik) dan perlakuan kedua adalah suhu penyimpanan pada suhu dingin (12 ± 2 °C) dan suhu ruang (28 ± 2 0 C). Parameter yang diamati meliputi total koloni dan morfologi jamur. Hasil penelitian menunjukkan bahwa pertumbuhan jamur efektif dihambat dengan perlakuan CaC^ 1 %, 27 °C, 6 menit sedangkan pertumbuhan jamur tidak efektif dihambat dengan perlakuan CaCl2 1 %, 50 °C, 10 detik. Umur simpan buah duku dengan perlakuan CaCl2 1%, 27 °C, 6 menit dapat dipertahankan selama 13 hari pada penyimpanan dingin. Jenis-jenis jamur pada buah duku adalah Aspergillus sp, Trichoderma sp, Mucor sp dan Rhizopus sp.
