Abstract
The research was conducted at Workshop and Biosystem Laboratory of Agricultural Engineering Department, Faculty of Agriculture, Sriwijaya University from September 2007 to February 2008. The research objective was to determine the variation of temperature and air flow rate on water content decreasing of chili {Capsicum annum L.) within tray drier. This study used Randomized Block Design that consisted of two factors and each treatment was replicated three times. These factors were drying temperatures of 45°C, 50°C, and 55°C as well as drying air flow rate of 3.5 m.s'1, 5.5 m.s'1, and 7.5 m.s'1, respectively. The observed parameters were evaporated water, water content, throughput, and drying rate. The result showed that dried chili had evaporated water from 10.14% up to 19,42 %, and water content of 63.74% up to 76.64%, respectively. The best treatment was found at 55°C drying temperature and drying air flow rate of 3.5 m.s'1. For this treatment level, the values of evaporated water, water content, throughput, and drying rate were 19.42%, 63.74%, 20.88%, and 8.073% per hour, respectively.
