Abstract

Penelitian ini bertujuan untuk mengetahui jenis jamur yang menyebabkan kerusakan buah duku setelah disimpan pada suhu dingin dengan tingkat kematangan yang berbeda. Penelitian ini dilakukan di Laboratorium Kimia Hasil Pertanian dan Laboratorium Mikrobiologi Pangan Jurusan Teknologi Pertanian, Laboratorium Mikrobiologi Jurusan MIPA Biologi, serta Laboratorium Kimia Pasca Sarjana Universitas Sriwijaya, yang dimulai dari bulan Februari sampai bulan Juni 2005. Penelitian ini menggunakan dua faktor perlakuan yang terdiri dari empat tingkat perlakuan untuk umur panen (Ai=8 Fruit Yellowing (F Y), A2=10 F Y, A3=12 FY, A4=14 FY) dan dua tingkat perlakuan untuk suhu (Bi=28 ± 2 °C, B2=12 – 15 °C). Tiap-tiap kombinasi perlakuan diulang sebanyak dua kali. Hasil menunjukkan bahwa buah duku yang dipanen pada tingkat kematangan 2 dan disimpan pada suhu dingin (A2B2) merupakan perlakuan terbaik dan tahan hingga penyimpanan hari ke-13. Genus jamur yang berhasil diidentifikasi selama 15 hari penyimpanan adalah Penicillium sp, Aspergillus sp, Mucor sp, Rhizopus sp, Alternaria sp, Geotrichum sp, Culvularia sp, Fusarium sp, Trichoderma sp, Botrytis sp dan Acremonium sp.
