Abstract

Tujuan penelitian ini adalah mengetahui karakteristik fisik dan kimia tepung Uwi (Dioscorea alata L). Penelitian ini dilaksanakan di Laboratotiun Kimia Hasil Pertanian, Jurusan Teknologi Pertanian, Fakultas Pertanian, Universitas Sriwijaya pada bulan Maret 2007 sampai Juli 2007. Metode penelitian yang digunakan adalah rancangan acak kelompok faktorial dengan dua faktor perlakuan dan tiga ulangan. Perlakuan pertama adalah warna umbi uwi (umbi ungu, umbi kuning dan umbi putih) dan perlakuan kedua adalah metode pengeringan (Oven 60 °C dan Matahari). Parameter yang diamati rendemen, kadar air, kadar abu, kadar pati, kadar amilosa, kadar amilopektin, indentifikasi bentuk dan ukuran granula pati, serat kasar dan warna. Hasil penelitian menunjukkan bahwa warna umbi berpengaruh nyata terhadap kadar pati, kadar amilosa, kadar amilopektin, serat kasar sedangkan metode pengeringan berpengaruh nyata terhadap rendemen dan kadar abu. Interaksi kedua perlakuan (warna umbi dan metode pengeringan) berpengaruh tidak nyata terhadap kadar air. Tepung uwi memiliki rata-rata rendemen 7,93 - 16,49 %, rata-rata kadar air 8,45 - 9,88 %, rata-rata kadar abu 0,93 - 1,53 %, rata-rata kadar pati 16,17 - 20,96 %, rata-rata kadar amilosa 15,05 - 22,32 %, rata-rata kadar amilopektin 77,68 - 84,86 %, rata-rata serat kasar 1,29 - 1,49 %. Warna tepung yang dihasilkan berwarna putih, putih kemerahan dan merah muda. Ukuran granula pati uwi berkisar antara 16-34 pm dengan bentuk oval, polihedral dan triangular
