Abstract

This research aimed to determine the effect of pressure and material thickness on characteristics of jicama flour using vacuum dryer. This research was conducted at Laboratory of Agricultural Product Biosystems and Chemistry, Department of Agricultural Technology, Faculty of Agriculture, Sriwijaya University, Indralaya, South Sumatra from January until July 2019. This research used a Factorial Randomized Block Design with two factors and three replications. The first factors was absolute pressure (47,997 Pa, 41,330 Pa, 34,664 Pa) and the second factors was the material thickness (1 mm, 2 mm, and 3 mm). The parameters observed include moisture content of jicama slices, flour, yield, drying rate, and color (lightness, redness and yellowness). The results showed that absolute pressure and material thickness had significant effect on all parameters. The A1B3 treatment was the best treatment with characteristics : moisture content of jicama slices 9,88%w.b, moisture content of jicama flour 8,77%w.b, yield 15,80%, drying rate 80,02%/d.b/hour, lightness 88,70, redness 6,10, and yellowness 9,80.
