Abstract

Tujuan dari penelitian ini adalah untuk mempelajari pengaruh pengurangan kadar air nata terhadap karakteristik nata de coco. Penelitian dilaksanakan di Laboratorium Kimia Hasil Pertanian, Jurusan Teknologi Pertanian, Fakultas Pertanian, Universitas Sriwijaya pada bulan Maret 2007 sampai dengan bulan Juni 2007. Penelitian ini menggunakan Rancangan Acak Kelompok (RAK) yang disusun secara faktorial dengan dua perlakuan dan tiga ulangan. Perlakuan pertama adalah beban ( 6,5, 9, 11,5 dan 14 g/cm2) dan perlakuan kedua adalah lama pengepresan (5, 10, dan 15 jam). Parameter yang diamati meliputi rendemen, kadar air, kemampuan menyerap air, aw dan uji sensoris. Hasil penelitian menunjukkan beban dan lama pengepresan berpengaruh nyata terhadap rendemen, kadar air, kemampuan menyerap air dan aw nata de coco yang dihasilkan. Perlakuan terbaik adalah nata de coco yang dihasilkan dari beban 11,5 g/cm dengan lama pengepresan 5 jam.
