Abstract

Penelitian ini bertujuan untuk mengetahui karakteristik fisikokimia edible film kolang kaling dengan plastisizer berupa gliserol dan sorbitol. Penelitian ini dilaksanakan di Laboratorium Kimia Hasil Pertanian dan Laboratorium Fitopatologi pada bulan Januari sampai Maret 2006. Penelitian ini menggunakan Rancangan Acak Kelompok yang disusun secara Non-faktorial dengan dua faktor perlakuan. Masing-masing perlakuan diulang tiga kali. Perlakuan pertama adalah konsentrasi gliserol (0,5, 1, 1,5, dan 2%) dan perlakuan kedua adalah konsentrasi sorbitol (0,5, 1, 1,5 dan 2%). Parameter yang diamati adalah kadar air, ketebalan, kuat tarik, persen perpanjangan, warna, laju transmisi uap air dan mikrostruktur. Hasil pengamatan menunjukkan bahwa konsentrasi gliserol dan sorbitol berpengaruh nyata terhadap kadar air, kuat tarik, persen perpanjangan, warna (lightness dan hue), laju transmisi uap air dan mikrostruktur, tetapi berpengaruh tidak nyata terhadap ketebalan, lightness (glycerol) dan chroma edible film. Edible film yang memiliki karakteristik terbaik ddalah pada penambahan konsentrasi gliserol 2% karena memiliki nilai ketebalan dan laju transmisi yang rendah.
