Abstract
Penelitian ini bertujuan untuk mengetahui sifat fisik, kimia dan organoleptic sari buah nanas dengan penambahan kalsium sitrat malat (CCM). Metode penelitian yang digunakan adalah rancangan acak lengkap non faktorial dengan empat perlakuan dan masing-masing perlakuan diulang sebanyak lima kali. Parameter yang diamati meliputi warna, kadar vitamin C, kadar asam total, kadar kalsium, kadar kalsium sitrat malat (CCM) dan uji organoleptik kesukaan. Hasil identifikasi menunjukkan bahwa penambahan kalsium sitrat malat (CCM) berpengaruh sangat nyata terhadap warna, kadar vitamin C dan kadar asam total sari buah nanas. Dengan menggunakan metode HPLC secara kualitatif pembentukan kalsium sitrat malat (CCM) dapat dilihat berdasarkan puncak-puncak baru yang terbentuk. Kadar kalsium tertinggi terdapat pada perlakuan D (CaC03 0,9g/l+citric acid 6,lg/l+malic acid 8,7g/l), yaitu sebesar 0,232 g/1. Hasil uji organoleptik menunjukkan bahwa panelis menyukai sari buah tanpa penambahan kalsium sitrat malat (CCM).
