Abstract

Penelitian ini bertujuan untuk mempelajari pengaruh penambahan bahan pengisi terhadap karakteristik kimia dan organoleptik leather mangga kweni. Penelitian ini dilaksanakan di Laboratorium Kimia Hasil Pertanian, Jurusan Teknologi Pertanian, Fakultas Pertanian, Universitas Sriwijaya pada bulan September 2007 sampai dengan Mei 2008. Penelitian ini menggunakan metode Rancangan Acak Lengkap Faktorial (RALF) dengan 2 faktor dan 3 kali ulangan untuk setiap perlakuan. Perlakuan pertama adalah jenis bahan pengisi (tapioka, pektin dan CMC) dan perlakuan kedua adalah konsentrasi bahan pengisi (0,5%, 0,75%, dan 1%). Parameter yang diamati adalah kadar air, asam total, indeks kecoklatan, warna, aktivitas air dan uji sensoris. Hasil pengamatan menunjukkan bahwa penambahan jenis bahan pengisi berpengaruh nyata terhadap kadar air, asam total dan indeks kecoklatan, tetapi berpengaruh tidak nyata terhadap aktivitas air dan sifat sensorisnya. Perlakuan terbaik dari leather yang dihasilkan adalah perlakuan yang menggunakan tapioca 0,5% dengan kadar air 14,41%, asam total 0,143%, A w 0,636, Indeks kecoklatan 0,394 dan dengan nilai warna 10 YR 8/8 (yellow red).
