Abstract

Tujuan penelitian ini adalah untuk mempelajari karakteristik edible film komposit dari kolang kaling dan lilin lebah yang mengandung antioksidan dan antimikrobia. Penelitian in dilaksanakan di Laboratorium Kimia Hasil Pertanian Jurusan Teknologi Hasil Pertanian, Universitas Sriwijaya Palembang, pada bulan Mei 2008 sampai dengan Februari 2009. Penelitian ini menggunakan Rancangan Acak Kelompok Faktorial (RAKF) dengan dua perlakuan, yaitu penambahan asam askorbat (0,50%; 0,75%; 1,00%) dan kalium sorbat (0,05%; 0,10%; 0,15%). Masing-masing perlakuan diulang sebanyak tiga kali. Parameter yang diamati adalah kadar air, ketebalan, persen perpanjangan, laju transmisi uap air, aktivitas antioksidan, kuat tekan, dan aktivitas antimikrobia. Hasil penelitian menunjukkan bahwa penambahan asam askorbat dan kalium sorbat berpengaruh tidak nyata terhadap kadar air, ketebalan, persen perpanjangan, laju transmisi uap air dan kuat tekan dari edible film. Penambahan kalium sorbat sebagai senyawa antimikrobia berpengaruh tidak nyata pada edible film. Penambahan asam askorbat sebagai senyawa antioksidan berpengaruh tidak nyata pada edible film.
