Abstract

Preparation and characterization of edible film from com starch which incorporated with Virgin Coconut Oil (VCO) to produce edible film had been conducted. This research also examined the physical properties of edible film such as thickness, tensile strength, and percent elongation. Variations in the concentration of the VCO which incorporated into edible film starts at 0% ; 0.5%; 1.5%; 2%; 2.5%; and 3 % (w/v) that can reduce bacterial growth and prevent free radical of DPPH (l,l-diphenyl-2-pikrilhidrazil). Fatty acids contained in the VCO and edible film was analyzed by gas chromatography method. Antibacterial test edible films using the Standard Plate Count method. DPPH method used for antioxidant test. The best formulation composition of edible films consisting of 4 g of com starch, 0.5 g of CMC, 3 mL of glycerol, and 100 mL of distilled water. According to GC data fatty acids which contained in edible film were similar with the fatty acids in VCO. From these researched it was known that a decrease in the number of bacteria between the film edibel control (without VCO) and edible film with the incorporation of 3% VCO is quite significant (84.2%). In testing for reduction IC50 between the edible film control and the edible film with incorporation with 3 % VCO was 55.60 %. The more the number of VCO added to edible film the thickness increased, but the tensile strength and percent elongation decreased. The best edible film which has the highest performance of antibacterial and antioxidant activity was the edible film with 3% VCO incorporated. This edible film also has good physical properties according to Japanese Industrial Standard where the thickness 0.21 mm, tensile strength 0.9 Mpa, and percent elongation 21.3%. was
