Abstract
The aim of research were to see the effect of S. lactis incubation time toward it’s organic acid content, antibacterial activity, pH and total acid. The incubation time were 44, 46, 48, 50 and 52 hours. The patogen used were E. coli, Salmonella thypi, S. aureus and B. cereus. Organic acid’s content were measured by HPLC. Antibacterial activity were conducted using well diffusion method. The result showed that optical density (OD) and titration of acid was increased during 44 and 48 hours, and decrease at 50 and 52 hours. Organic acid detected at 44 and 52 hours were the same : acetic acid, propionat acid, lactic acid, butirate acid, malate acid, and oxalate acid, with variety concentration. Antibacterial assay showed that that 48 hours, gave maximum inhibition zone. Gram positif pathogen less sensitive than Gram negative patogen. The result of this study shows that inhibition zone to E. coli and Salmonella thypi were 141.41 mm2, 138.356 mm2 respectively. Inhibition zone to S. aureus and B. cereus were 183.347 mm2, 248.206 mm2 respectively.
