Abstract
Penelitian ini dilaksanakan di Laboratorium Kimia Hasil Pertanian, Laboratorium Sensoris Jurusan Teknologi Pertanian, Fakultas Pertanian Universitas Sriwijaya, Indralaya. Penelitian ini dilaksanakan pada bulan Desember 2013 sampai dengan Juli 2014. Penelitian ini bertujuan untuk mengetahui pengaruh penambahan bubur bayam terhadap karakteristik fisik, kimia, dan sensoris stik yang dihasilkan. Parameter yang diamati meliputi Analisa fisik (warna tekstur), analisa kimia (kadar air, kadar abu, dan kadar kadar serat kasar dan kadar karoten total), analisa sensoris (uji hedonik, yaitu aroma, warna, tekstur, dan rasa).Penelitian ini menggunakan Rancangan Acak Kelompok Non Faktorial (RAK) yang terdiri atas 5 faktor perlakuan. Faktor perlakuannya yaitu konsentrasi penambahan bubur bayam (0%, 10%, 20%, 30%, 40%) yang masingmasing perlakuan diulang 4 kali. Hasil penelitian menunjukkan bahwa penambahan bubur bayam berpengaruh nyata terhadap karakteristik fisik (warna dan tekstur), kimia (kadar air, tekstur, kadar serat kasar dan karoten total). Hasil penelitian terbaik terbaik adalah stik bayam dengan perlakuan 10% dengan karakteristik sebagai berikut: warna: lightness 49,90%, chroma 14,55% dan hue 102,28°, tekstur 1095,70 gf, kadar air 3,43%, kadar abu 3,02%, kadar serat kasar 0,85% dan karoten total 26,77pg. Uji sensoris menunjukkan bahwa B adalah perlakuan yang banyak disukai panelis. Hal ini ditunjukkan dari nilai aroma 3,14, tekstur 3,32, rasa 3,60, dan warna 3,70.
